Right now we are swimming in Basil. Of course we will make pesto -- but what we really want are cocktails! Here are a couple of fun recipes inspired by Jerry Traunfeld's The Herbal Kitchen. Let us know if you love them!

Cocktails

Fresh homemade soup is a celebration of many things: traditional recipes handed down through generations; farm-fresh produce hand-picked and carefully prepared; a slow and unhurried cooking process; a family gathered around the dinner table enjoying a simple yet nourishing meal.

 

This salad is festive, seasonal and very simple to put together.  The unique persimmon flavor is reminiscent of cantaloupe, mango and pumpkin and complements the peppery arugula and salty prosciutto.

 

I love preserved lemons.  Easy to make, they brighten up almost any dish from salads to pizzas.  I add strips to bowls of olives and chop the zesty rinds and add them to platters of green beans.  And let’s face it – they are beautiful to look at in your pantry or fridge! 

 

Summer Cherry Tomato Pasta

This recipe is quick and easily made for one or twenty (depends on how many tomatoes you have). I especially like this recipe on a hot night when I don't want to turn on the oven or too many burners in the kitchen. You can adjust the garlic to taste (or according to who is coming for dinner) and it is even better the next day warmed up for lunch.
